They are roads with a brown sign that says old rustic road. All the ones down here is the south eastern part of the state seem to have a lot of old farms on them.
Googled Rustic Roads Wisconsin and you get a WI DOT site which shows all the roads:

They often are very narrow and quite winding which make them fun to drive. I have driven on both in Washington County and they give a very nice scenic ride, expecially the one that runs by Holy Hill Church. Highly recommended!
